White Chocolate Gelato (makes 1 Quart)

I created this recipe for a July 4th festival in Atlanta. It combines the red, white, and blue colors of the US flag and makes for a delicious patriotic dessert. Serve it at your next firework party or cookout.

Ingredients:

2 cups whole milk

1 cup heavy cream

6 oz. white chocolate, chopped

4 eggs, separated

½ cup of sugar

Equipment:

Heavy bottom saucepan

Cooking thermometer

Rubber or wooden spatula

Whisk (electric or stand mixer)

Mesh strainer

Medium glass bowl

Ice cream maker

Airtight freezer-safe container

Directions:

Combine milk and cream in a heavy-bottom saucepan. Place over medium heat and cook, stirring occasionally so the milk doesn’t form a skin. Allow temperature to reach 170F, and then remove the saucepan from heat. Add white chocolate and stir until smooth.

Whisk the egg yolks in a medium bowl until smooth. Add the sugar and whisk till well incorporated. Temper the eggs by slowly pouring in the milk mixture while whisking continuously. Return the custard to the saucepan and place over low heat. Again stir frequently and heat till the custard reached a temperature of 185F.

Pour the liquid through a mesh strainer into a clean glass bowl. Cool in an ice bath or at room temperature. Cover and refrigerate for 4 hours.

Pour the custard into an ice cream machine and churn according to manufacturer’s instructions. Transfer to an airtight container and freeze for at least 2 hours before serving.

Scoop the gelato into individual bowls and decorate with red (strawberry, raspberry) and blue (blackberry, blueberry) colored berries. Enjoy chilled.
